Not Just 'Any' Brownie Recipe

Happy New Year to my fellow foodies! My best friend reminded me today that I have actually been blogging for 1 whole year now! That's such a neat reminder and accomplishment for me!  I have now created over 50 of MY VERY OWN recipes!  That's just so exciting for me! So, really...thank you all for actually reading my blog and trying my recipes. You are the ones who have kept me blogging! :)

I have big plans for my blog this year and for my life! I'm sure we all do and I encourage each and everyone of you to follow you heart and JUST DO IT! As some of you may know, I work for a local author as her marketing director and she also founded a nonprofit which I help run too.  Well, not only is she my boss, but she is such a motivator in my life! Each meeting we have, I come home so pumped and ready to follow the goal I may have discussed with her over lunch.  It's so refreshing to have someone really believe in you other than your spouse (they are supposed to rally us..she doesn't HAVE TO :) So, I want to be that person for you and support not only your dreams, but your Cleaner Eating lifestyle! 

In the near future, you may see me change some things up. Like perhaps I may be moving my blog to an actual website with my own domain where I will be offering meal plans and other resources to help myself and you all in your cleaner eating journeys!  After all, it's a group effort and I want to be easily accessible to anyone who may have some questions.

Ok, today's recipe! I know I have posted a brownie recipe once before on my blog.  It was a black bean brownie with the banana nice cream on top. It is also delicious, but this new one I did for the New Year dinner I had at my house is PHENOMENAL! You would never ever believe it's as healthy as it is! 



Ingredients:

  • 1/2 cup of melted coconut oil
  • 1/4 cup honey, agave or maple syrup
  • 2 eggs
  • 1 tsp of vanilla
  • 1/3 cup of unsweetened cocoa 
  • 1/2 cup oat flour
  • 1/4 tsp of salt
  • 1/4 tsp of baking powder
  • 1/4 cup of chopped pecans
  • 1.5 oz of dark chocolate bark (or you can use a really dark chocolate chip 66% or higher) Reserve or add one more little piece of the bark and melt it for a drizzle on top after they are baked. super good and it makes them pretty :)

Method:

Mix all ingredients together and bake. That simple.
Bake at 350 for18-22 minutes.  Don't over bake these babies though!




So good. I even melted 1 tbsp. of dark chocolate and drizzled it on top. SO SO GOOD!

See what I did to test this cleaner brownie on my chocolate loving in-laws was I had them eat one before telling them how healthy they are.  They were shocked! They couldn't believe they were sugar free and made from oatmeal! I mean, how awesome is that!? 

I will definitely be making these a lot around my house and even for my husbands upcoming potluck.
