Veggie "Burgers" and Sweet Potato "Fries" are sure to please

Tonight's dinner was one of our absolute favorites! It makes us feel not so "clean", yet it's super clean, whole foods we are putting into our body. How much better can you get? And for you gluten free people, this will make your belly happy.  Now, if you have a burger, you need a bun right? Duh! So, I've included my oat "bun" in this post as well. Now, bare with me.  This isn't like your hamburger bun you buy at Kroger.  This isn't your beefy burger.  And these are not your crispy, greasy fries that you oh so love.  This is a meal that will satisfy that craving, and leave your body, mind, and soul happy happy! :) I hope you all enjoy this one as much as we do!
"BURGER"
Ingredients:

1 1/2 cups black beans (cooked with some garlic cloves, cumin, and 1/4 tsp of salt)
1/4 cup oats
1 egg
1 tbsp. of garlic powder
1 tbsp. of onion powder
1 tbsp. of cumin
4 garlic cloves

Directions:
Put 1 cup of black beans(set aside other 1/2 cup of beans), add all other ingredients in the food chopper or processor and process for just a few seconds (until it looks like a thick paste type of consistency)
Add the 1/2 cup of beans you set aside.
stir up with your hands. Form into "burger" patties
Heat up your griddle, coat with a tid bit of sunflower oil and cook each "burger" on each side for approximately 5 minutes or so each side(until lightly browned)

"BUN"
Ingredients:

1 cup of oats
2 tbsp. of flax seeds
1 tbsp. of onion powder
1 tbsp. of chili powder
1 tbsp. of garlic powder
1 egg
1/4 cup of milk
1 tbsp. of sunflower oil (you can use olive oil if you wish, I just prefer sunflower bc of the added health benefits)

Directions:
Throw all of the ingredients in the food processor, process until it is blended.  It will be kinda thick. This is fine. I add another 1/4-1/2 cup of whole oats into this mix to give it some thickness and extra hold to the bun. I recommend this. Now, along side your burgers, add these buns and cook about the same amount of time 5 or so minutes on each side.

**I make a pico de gallo to top off our burger, and I slice an avocado also to top it off! How do you make pico you ask? easy...here ya go!


Ingredients:

2 roma tomatoes diced
2 tbsp. of fresh cilantro
1 tbsp. of lemon juice
2-3 tbsp. of finely diced red onion
4 garlic cloves diced
salt and pepper to taste (just a tad of salt, we are low sodium people here!)
That's it.. add it all together in a bowl, mix it up. Serve. This is especially delish if you refrigerate a few hours before!

As far as the sweet potatoes go, just dice them up in somewhat smaller chunks, put in a bowl, toss with 1 tbsp of sunflower oil, garlic powder and 1/4 tsp of salt. Bake at 400 degrees for 20 minutes. ENJOY!!! ~Cheers, Amanda
